I am excited to offer a new tour for a small group of serious chefs and
food lovers to go to a very special place, the Emilia Romagna region of
north central Italy. This area is home to some of the best-known Italian
culinary traditions such as the making of tortellini, aceto balsamico,
Parmigiano Reggiano cheeses and Prosciutto di Parma. Emilia Romagna is
growing in popularity as a serious international culinary destination.
The tentative departure date for this trip is June 28-July 5.
SUGGESTED ITINERARY
DAY 1/ ARRIVAL BOLOGNA
Arrival at Bologna G. Marconi International Airport. Welcome
and assistance by tour representative. Transfer by private deluxe coach to
the Hotel chosen.
Welcome cocktail upon arrival. Check in and time to relax.
In the late afternoon you will have a lovely walk through the medieval market
to discover the history, art and traditions of Bologna.
∗ A traditional bakery and pasta maker's. The history of tortellini and tagliatelle
∗ A traditional chocolate maker where solid chocolate was invented
∗ Beccari's salsamenteria. The history of mortadella, from the third century
BC up to modern times
∗ A typical Bolognese osteria. The fun-loving side of the world's oldest university
After the tour free time to relax and dinner at leisure. Overnight at Hotel.
DAY 2 / PARMA (B, L)
Breakfast in hotel. Early morning departure to Parma.
Visit to a Parmesan cheese producer and tasting.
This tour will give you the chance to learn the secrets of one of the most famous
Italian gastronomic speciality: PARMIGIANO REGGIANO CHEESE.
After the visit transfer to a very farmhouse for a 4 hours cooking class followed
by lunch tasting of the prepared typical Parmesan dishes (3 hours cooking class
in the morning + 1 hour cooking class in the afternoon).
After Lunch return to Parma for a half day guided city tour
Main attractions of the town are the splendid Romanesque Cathedral, frescoed
by Correggio and the octagonal Baptistery, Benedetto Antelami's architectural
and sculptural masterpiece.
Return to Bologna. Free time at disposal and dinner at leisure. Overnight
at Hotel.
DAY 3 / MODENA (B, L)
After breakafast departure to Modena
Arrival to a very nice Farmhouse for a 3 hours cooking class followed by
lunch tasting of the prepared typical Parmesan dishes.
MenuĠ of the day:
Souffl al parmigiano, cestini di grana con insalata, scaglie di grana con
aceto balsamico di Modena, risotto alla Parmigiana, tasca di pollo farcita
di grana e prosciutto con rucola e menta, spiedini di pere e grana con miele,
zuppa inglese
In the afternoon return to Modena for a half day guided city tour and a
visit of a traditional balsamic vinegar producer. The guide will explain
the main rules for producing the best Traditional Balsamic Vinegar of Modena;
and finally a taste of the product.
Back to Bologna. Free time at disposal and dinner at leisure. Overnight at Hotel.
DAY 4 / BOLOGNA (B, L)
After breakfast into the International Cooking School in Bologna.(private
English speaking chauffeur for individuals).
You will have the possibility to discover the secrets of our typical homemade
pasta rolled out by hand (Tortellini, Tagliatelle and Tortelloni). Each
participant will take part actively at this 3 hours lesson followed by a
lunch tasting of the prepared first dishes.
After lunch, back to the city centre and time at disposal for shopping,
individual visits. Dinner at leisure. Overnight at Hotel.
DAY 5 / SAN MARINO (B, L)
After an early breakfast departure to San Marino (104,93 Km, 1 hour 15Ġ
from Bologna) to discover the oldest and smallest Republic of the World
and the myth of Ferrari cars through the MARANELLO ROSSO Ferrari Museum.
The largest collection of the legendary racing car constructor entirely
dedicated to the Myth of the Prancing Horse. Lunch at leisure.
Shopping and walk: Free time for individual visit of the wonderful city
of San Marino, this ancient republic on the Titano mountain and possibility
to make shopping in the outlets of the most important Italian Fashion Brands.
In the way back to Bologna stop and visit the medieval village of Dozza and
its castle that houses an ancient cellars. The tour of the castle will end
inside the ancient cellars where you will have a guided wine tasting. The
cellars in fact house the Enoteca Regionale dellĠEmilia Romagna which is
a permanent wine exhibition covering around 1,000 square metres with almost
800 different wines produced by around 200 wineries and co-operatives.
Back to Bologna and free time for dinner and persona activities.
DAY 6 / FERRARA (B, D)
Morning departure to Ferrara. Half day guided city tour.
Ferrara is beautiful town whose name is linked to the D'Este family that
ruled the area for many years in medieval and Renaissance times. The visit
includes: the Cathedral, the Castle, Schifanoia Palace, the Jewish Ghetto
and the city walls. Art lovers cannot miss the great exhibitions at Palazzo
dei Diamanti.
Free time at leisure in Ferrara.
In the afternoon back to Bologna and time at disposal for shopping, individual visits.
Dinner with live music entertainment in one of the most ancient taverns in Bologna.
The restaurant is located in a 1400 palace in the historical centre of the
town. Now this tavern is completely restored
but historically unchanged with its characteristic grin vaults, the 1400
fireplace, the wine-cellar, the spring water well and the original counter
imposed by the Pope in 1600.
After dinner back to the hotel for the night.
DAY 7/ DEPARTURE
Breakfast and transfer to the Airport for departure.
